The most incredible cookies filled with chocolate, raisins, and oats. They are gluten free and can easily be made dairy free as well.

Ingredients

  • 1 cup almond flour
  • 1/2 cup quick cooking steel cut oats
  • 1/4 cup coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup butter or coconut oil for dairy free, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, oats, coconut sugar, baking soda, and salt.
  3. In a separate bowl, whisk together the coconut oil, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Stir in the chocolate chips and raisins.
  6. Drop the dough by rounded tablespoonfuls onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
