These popovers are so simple, made right in your blender, and come out perfect every single time. I love these with some butter, jam, or just as is with my dinner.
Ingredients
- 2 eggs
- 3/4 cup milk
- 3/4 cup gluten-free all-purpose flour
- 3 tbsp butter, melted
- optional: pinch of cinnamon sugar on top before baking for extra bit of sweetness
Instructions
- Start by preheating the oven to 450F and place a muffin tin inside so that it gets hot while preheating.
- To a blender, crack in two eggs, add milk and flour. Blender until smooth.
- Then, add in melted butter and blend again.
- Remove the hot muffin tan from the oven and spray it with some oil spray.
- Pour batter into the muffin tin to almost the top.
- Bake for 15 minutes.
- Then without opening the oven, reduce oven temperature to 350F and bake an additional 5-10 minutes until popovers and golden and puffed up. Enjoy!
