These popovers are so simple, made right in your blender, and come out perfect every single time. I love these with some butter, jam, or just as is with my dinner.

Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup gluten-free all-purpose flour
  • 3 tbsp butter, melted
  • optional: pinch of cinnamon sugar on top before baking for extra bit of sweetness

Instructions

  1. Start by preheating the oven to 450F and place a muffin tin inside so that it gets hot while preheating.
  2. To a blender, crack in two eggs, add milk and flour. Blender until smooth.
  3. Then, add in melted butter and blend again.
  4. Remove the hot muffin tan from the oven and spray it with some oil spray.
  5. Pour batter into the muffin tin to almost the top.
  6. Bake for 15 minutes.
  7. Then without opening the oven, reduce oven temperature to 350F and bake an additional 5-10 minutes until popovers and golden and puffed up. Enjoy!
